Santoku knife
The Santoku is the oriental version of the chef's knife. Its name means "three virtues", which are meat, fish, and vegetables. It is used for all cuts on the cutting board of meat, fish, and vegetables. The wide blade allows working on the cutting board without hitting the hands.
